Millet, JPIX, KCC and Upcoming

I have recently been exploring millet. Some say millet is an alkaline forming grain (and that this is a good thing). While the alkaline/acidic food balance theory may just be a theory, I’ve gotten interested in learning how to cook millet. What do I do with it?

I’ve made millet like rice: two parts water to one part millet. It was OK, kind of grainy, and when it was warm, and I stuck in a bit of cheese, I liked it better (but cheese is supposedly acidic, so that sort of defeats the alkalizing part). Recipes, anyone? Here are some I found online:

I haven't looked at those recipes yet but we enjoy millet as the base of a chickpea/zucchini/tomato/green herb/etc. type vegetable stew. (I think the original recipe came from Moosewood but it's morphed a bit over the years.) It also works as a healthier base for couscous too.

I would more than likely try Olive, Tomato, and Millet-Stuffed Zucchini, as I like zucchini, and think this would be a good way to serve it.

I would also try the stuffed zucchini, or use it to stuff another vegetable.

I was looking at your millet recipes. Don't believe I've ever seen a Shepards without some meat in it. This one looks very good.

There is a sheperd's pie in one of my Moosewood cookbooks - Moosewood Restaurant Low-Fat Favorites - that has a sheperd's pie with mashed potatoes, kasha and vegetables. Tasty.
