Stuffed Squash for Pesach with bits of Matza and Mushroom

The idea for this recipe was to create a tasty food that had no meat, no dairy, no egg and would be filling. And I could eat it on Passover.

Ingredients:

  • 1 acorn squash
  • 1 box of mushrooms (I used shiitake)
  • 1 onion, chopped
  • 1 celery stalk, chopped
  • 1 piece whole wheat matza, crumbled into farfel (bite size pieces)
  • salt and some herb spice (I used thyme)
  • a bit of olive oil for sauteeing

Bake the squash in the oven for at least an hour or until tender. Cut it in half. Take out the seeds. Scoop pieces of the squash to mix with the stuffing (I didn’t do this, but I wish I did). Saute the onion until translucent. Add chopped mushroom and celery; continue cooking until soft. Mix in matza, thyme and bits of squash. Stuff it in the squash. At this point, you can bake it in the oven. However, what I did was put it on the warming tray for 3 hours. Serves two.

And even though we don't eat gebrochts, we would even eat this dish on Pesach - since there's no water in the recipe...

This looks good and I supose there is no end to what you can add or change in this recipe.
However I don't think we can find acorn squash here at the moment.

Mimi stuffed artichokes. You can also stuff: zucchini, tomatoes, mushrooms (too much work! only for a tiny elegant party), butternut squash (although it will be gigantic), peppers.

Anyone have other ideas for stuffers?

I had hearts of palm yesterday. They might go nicely in the stuffing, too!

Oh, I forgot...you can stuff yams or sweet potatoes, much the same way, and/or add raisins, or whatever flavor you desire.

I think I should have added "and no potatoes or sweet potatoes in the recipe." In previous years I made sweet potatoes on Pesach as a filling dish. This year, I got so tired of them!

But stuffing a yam might work great for someone else.

I have printed this recipe, it looks delicious!! But I think it 'll have to wait until fall, I'm not sure I can find squash right now?
